Restaurant is OPEN

Ok folks, opening a restaurant before it is ready to appease the owner of the hotel just sucks.

.

While hoping for a soft opening to ease through the difficulties was my dream it wasn't my reality.

.

First day open we served about 45 meals. Today I think I served that many breakfasts and at noon I was exhausted beyond belief.

.

First day the Stove blew up in Doris face. He got a inexpensive haircut which he needed but didn't want. Next night we had a guy here till 2:30 in the AM fixing or maybe rebuilding it. Come to find out that the stove guy was familiar with our stove and he said it hasn't worked in 10 years. Live and learn. Cost a little over 200 dollars so not so bad.

.

Today I had a bunch of Dopes ordering 10 things and changing 10 times. They will get their first lesson in civility tomorrow when I take no substitutes in anything from them. Boohoo if they don't come back.

.

Maybe tomorrow will be an easier day. We had a new chef start today and he is great! Dori the pessimist even liked him. Real good cook and worker. Hot dog, he even knew a bunch of my customers and asked to go out and great several which was fine with me.

.

I hope to have the lights installed today and hope to get more stuff complete. I don't have time for anything now because we turned out to be terribly understaffed with 8 people working now. Never thought I would do so much business in the slow season as we are doing in our first week. Yuk this will take some getting use to but I will I guess.

.

Hasta Pronto!

PS>How about the new logo?

Surely you didn't think that you'd be able to open a restaurant and sit back and do nothing. So much for retirement, huh?

Glad to know you're finally open and that things are busy but, of course, it will take some time to work out the kinks, though I imagine you've given enough thought to those things to mitigate their impact.

I'm becoming more eager to get by there and have a cold Bud (there will be Bud, right?) and a nice meal. Maybe the ribs for the first time out.

BTW, do I pick up my discount card when I get there, or were you going to mail it? LOL

Good luck Escott!
The restaurant business is a tough one anywhere but especially in the DR! It wont leave you time for a LIFE anymore! : )
Been there, done that! Would NEVER do it again! But am so glad there are people like you willing to do it so I will have a place to visit!
